Quick Healthy Dinner (and some RCR Club News!)

September 3, 2008 by Valerie Waters

I have to be honest, when I announced the Red Carpet Ready Body Assessment program a few weeks ago, I had no idea I’d get this sort of response.

I mean WOW

As much as I’d love to, it would just be impossible for me to get to everyone.

But to this day, I’m still getting tons of requests for me to give them a personal assessment

So what I’ve decided to do was to include a personalized video body assessment as part of enrollment in the private 6-week coaching group within the Red Carpet Ready Club. (availability is limited here)

The idea being that with a smaller group, it will allow me to more closely give you the same experience my celebrity clients receive… and give us a chance to work more on YOUR specific issues

No, It’s not going to cost an arm and a leg. Nowhere near as much as your local gym’s personal trainers!

(not to worry, you don’t have to join the Platinum 6-week coaching group to be in the Red Carpet Ready Club.)

So if you’re interested in a more personalized experience, just leave a quick comment below and let me know.

I’ll be sending out a brief application in the next day or two so we can get the ‘pre’ stuff out of the way. This way, we can get right down to business when the club opens!

Oh and by the way, I may be giving away a free ‘scholarship’ or two into this exclusive group ;-) Details to come…

    Hey val-
Dinner looked yummy!, I love that your puppy thinks so to :-).
I can’t wait for the Red Carpet Ready Club to start, I am constantly checking the site to see if any new information has been added, and the countdown timer is great!
I am soooooooo excited that your planning to do the assessments, I want one really, really, really bad! I think it will really give me some focus, an idea of what exactly I am working towards. I have watched all of them, and I think they are great, It sounds silly, but I couldn’t wait to take a picture of myself in a bathing suit (I never thought that possible) even if I am never chosen for an assessment, I have scrutinized my own pictures and am seeing some of the things that you talk about in your videos. It’s like I am getting a map-one with step by step directions to a better body.
Anyways, I was just dropping a note to let you know, that yes, I am interested in getting the application-and as for the scholorship-yahoo! that would be great!
Thanks again for helping all of us find our way back into our skinny jeans:)
    Sonia

I ditto what Sonia said above., (well most of it anyway). I’ve been following your other blog and just found this one today. I’m saving my pennies to buy the RCR plan ($77 shouldn’t be so hard to find but apparently it is). I wish I had found you earlier as I would have loved an assessment. I’ve listened to most of them and will incorporate some of the suggestions into my current routine.

My holiday wish list includes the Valslide and Valbands, DH even has it bookmarked (I just hope he remembers when the time comes).

I too am very interested in the scholarships (pick me, pick me lol)

Thanks for the great tips and amazing workouts. The action hero ones are KILLER!.

    Val~
I am very interested and as you know actively doing RCR. I would love to be considered for a 6 week coaching group. As soon as the news comes out let me know.
Seriously I check my email hourly, just in case there is some breaking news or that there is something that I might miss for being late.
Thanks for all the great things you are providing to us.

How much is it going to be?

    Oh baby I CAN’T WAIT!

  6. Stephanie C on September 4th, 2008 12:08 pm

Hi Val! I am absolutely interested in having the opportunity to have a 1-on-1 assessment and coaching from you! That has been my hope since I started following you, I just never knew how that would be possible with me living out of California. So I am super excited and hope that I can be part of this group! Thanks so much for all the great tips you give. I am diligently doing my ValSlide workouts and feel sooooo good. Sore, but good, and tell myself that the pain is my body getting stronger! Thanks.

  7. mandy on September 4th, 2008 12:11 pm

Val! This recipe is great! We have a new gas grill on order and it should arrive any day now. This will be the very first meal we initialize the new grill with!

I’d love to be a part of your 6-week 1-on-1 group! Keep me posted!

    Thanks for all you do!

  11. Jennifer on September 4th, 2008 12:26 pm

Hi Val! First of all I love all of the information that you have shared with us. I currently have RCR but have not done it yet because I am currently training for a marathon (October). Once that is completed, I will be focusing on fat loss and body recomposition and following RCR. I would love to part of a 6 week coaching group. I love your body assessments and check your website several times a day to get new information. Please let me know more about the coaching program and I will quickly join.
    Thanks again,
    Jen

  12. LindaM on September 4th, 2008 12:29 pm

Hallelujah (sp?)! Someone out there actually eating something other than the breast of a chicken–I think there are two of us now! You made my perfect meal–I grill asparagus all the time–only way I will eat it. Great stuff here Val…

  13. Sue on September 4th, 2008 12:30 pm

I would love to participate in your 6-week coaching group. I’ve completed RCR twice with some pretty good results, though I still have more work to do. I’d love to get some more personalized advice and direction. The RCRC site is coming along nicely and I’m finding it very motivating. Thanks for all of your time and hard work!

  14. Marianne on September 4th, 2008 12:33 pm

    Hi Valerie,
I’ve been quietly following along here and reading all the assessments. I think I am ready to give your RCR a try..have been excited to read what the other girls are doing and eating and I can’t wait til Tuesday. Can we all get in–is there a list? I hope not..the computer is not my best friend. I hope I can get on to watch the live call. Thanks!

  15. Dotti on September 4th, 2008 12:37 pm

Dinner looks wonderful. I am going to make this tonight! I am also interested in the 6-week coaching group and would like to know the cost.

  16. valerie waters on September 4th, 2008 12:41 pm

    Hi Mandy,
I will put my Quinoa recipes up on the site when it’s open. I definitely want yours too!! We are going to have a place where people can submit recipes. I love quinoa too!! Maybe should ask Ryan if we can post yours on the blog so everyone can try it and comment.

  17. valerie waters on September 4th, 2008 12:43 pm

    Hi Jennifer,
Way to go on the marathon training. My sister does marathons. She did one in the spring and then used RCR afterwards to getting ready for her wedding. She looked so beautiful on her wedding day!

  18. Lisa on September 4th, 2008 12:44 pm

Hi Val and everyone! So excited about next week–first time in a long time I’m looking forward to working out. Yes, recipes, please! That’s my biggest problem–always trying to figure out what to eat/cook. This is great!

  19. Didi on September 4th, 2008 12:46 pm

I love the countdown at the top..reminds me I better finish the cookies before next Tuesday comes along. Can’t wait..all you girls and your pictures have me ready to go!

  20. Mark Salinas on September 4th, 2008 12:47 pm

Fantastic! It looks very tasty! Great tips! Thanks! :)

  21. Danielly on September 4th, 2008 12:54 pm

    Hi Val,
I’m definitely interested in participating in your one-on-one Platinum 6-week coaching group. Please let me know when that will start and how much it will be.

BTW, the chicken looks sooooo good, and you’re absolutely right, chicken breast gets boring after a while… Unfortunately, I gotta go out and buy a grill! On another note, what other veggies besides asparagus would compliment this dish?

P.S. Thanks for everything. I love reading your emails and learning new exercises… Now it’s time to trim the fat! :) Take care.

  22. Yannik on September 4th, 2008 1:04 pm

Val - You should be on the Food Network! :) That was a fun segment and I love that you are not shy with the olive oil…
Count me in as one interested in the 6-week coaching group. I have completed RCR once and I have so many questions on what I should do next and how I should tweak this method and the exercises to get the best results for my goals and personal shape/fitness level.

  23. Shanti on September 4th, 2008 1:06 pm

    Looks yummy!
I have been actively doing RCR since i bought your program a week and a bit ago and I have a LONG ways to go to get back in shape and even good health again but i can tell you SOMETHING is working. I get up and move so much more easily now, my mood has skyrocketed from what it was and my energy in general has picked up where sagging would have been a massive understatement.
I check daily to see what is new on the Website and can’t wait for the RCR Club to launch! You say INTENTION so often its like my keyword now. :D

As for the Platinum 6 week coaching group - YES very interested. I am currently a stay at home mom with a small toddler so money is tight but if i can squeak out those pennies i will BE THERE :D Health is too important in my mind not to come first and I not only want to be a positive person for ME but also a rolemodel of health for my son ( and am hoping it catches on to my husband who aspires but is so thing eats junk food alot and i see my son emulating him)

Way too long: in short YES interested if i can afford it. If not I will be super interested to hear about the scholarships - as long as I don’t have to eat worms or do 1000 pushups in a row to win a spot I am good ( and i would TRY the pushups lol) :D

  24. Kristi on September 4th, 2008 1:08 pm

    Val,
Thanks for the dinner video…now I know what I am cooking tonight! You are fabulous, thanks for doing this for all of us! Can’t wait until Tuesday, I hope I get in!

  25. jodie on September 4th, 2008 1:09 pm

I am interested. I can’t wait. Thanks so much.

  26. Linda on September 4th, 2008 1:10 pm

Danielly, I cook a lot of broccoli seasoned with olive oil, sea salt, pepper and garlic powder–tastes awesome that way! Actually I steam or grill most veggies and season with those same ingredients–it’s makes all veggies taste great! Just an idear!

  27. Cindy on September 4th, 2008 1:15 pm

I love your ideas. I would love to be considered for the platinum group to receive a personalized assessment. The idea of giving out scholorships is wonderful. I am waiting patiently for the club to open as I am very eager to be a part of it. Keep up the great work that you are doing. I hope that I am one to receive the brief application!!! Love ya!

  28. Carol on September 4th, 2008 1:18 pm

Please include me in on the group if you still have space! thanks

  29. Danielly on September 4th, 2008 1:19 pm

Thanks for the idea Linda… Out of curiousity how long does it take you to prepare the broccoli? Lately, I’ve been using a lot of frozen veggies and microwaving them. Sometimes they taste great, however, I wanna try to cook it fresh to see if it tastes better. :)

  30. Valerie Waters on September 4th, 2008 1:24 pm

Wow, thanks everyone for the great response!

Have tons of stuff to get done before Tuesday, but my friend Ryan, who’s helping me with the Red Carpet Ready Club said that we’ll have an announcement later today or tomorrow morning.

More details, the application for the coaching group, etc.

He’s working on everything for us right now

  31. Aubreigh Hutchison on September 4th, 2008 1:26 pm

    Hi Val,
Its Aubreigh Lindsey Carnett’s Friend that does work for CUUR. Just wanted to say thanks for everything you have done, i have started the RCR workouts and have a few questions for you. When you are doing the circuit training do you do the first circuit 1-3x’s and then then second circuit 1-3x’s and then the third circuit 1-3x’s or do you do all three one time through and then all three a second time through etc? because i have been doing the first circuit 3x’s then the second circuit 3x’s and so forth! Am i doing it correct? Please help :) thanks again for everything you have done…aubreigh

  32. Terri on September 4th, 2008 1:27 pm

Hi Val - Thanks for the great dinner idea and all the wonderful info you’re putting out there for us! If I can afford it, I would love to be part of the 6-week RCR group.

  33. Ryan on September 4th, 2008 1:29 pm

    Yup!

Hint: if you’re wondering about the scholarships, start thinking about ‘your story’

We want to know about you.. what you’ve tried, what’s worked, what hasn’t worked..

Doesn’t need to be an essay, but the more we feel like we ‘know’ you, the better!

(Oh, and another hint: tell your story on video and you get EXTRA POINTS!)

Valerie will make an official announcement soon, but thats that to get your started

  34. Amy on September 4th, 2008 1:45 pm

  35. Shari on September 4th, 2008 1:55 pm

I am excited about the new group and the personal assessment. If I can afford it, I will participate! :)

  36. Stephanie on September 4th, 2008 2:04 pm

    Hey Val,

I just finished the RCR workout to get ready for a friend’s wedding and I absolutely loved it. What I’m interested in is taking it to the next level - maintaining my toned body and blasting my remaining 10 lbs I’d like to lose. Also, what do you do when you are done with RCR? How should I be switching up my routine so I don’t plateau?

It would be amazing to be a member of your personalized club. I’m looking for tailored professional advice that would help me meet my goals. I’m one of those girls that gains in her belly and no matter what I do (strength training, intervals, half-marathon) - can’t lost those last 10. I know part of it is my diet, but with your guidance I have gotten so much better and eat clean the majority of the time. I defiinitely lost inches around my stomach doing RCR, but I just want to lose the fat that’s hiding those rock hard abs!

All of my friends have noticed the changes in my body and I sing the praises of the valslides to them on a daily basis. I just got the covers too and that has made a world of difference because now I really can use them anywhere.

Val, I’d love the opportunity to work(out) with you.

Thanks so much for doing all of this,
    Steph

Thanks so much for your great information!

  37. Linda on September 4th, 2008 2:10 pm

Danielly, for broccoli, I always buy the frozen florets..my fav! I have a great microwave dish with cover–I add the broccoli, about 1/4 cup water and cover and cook for about 7-8 minutes. Broccoli comes out perfect..I drain whatever water is left and then season. For asparagus, I always buy fresh (don’t like mushy asparagus, plus it cooks really quick on the grill); try grilling green peppers on onions as well..great sides for most meat dishes.

Hey Ry, get that recipe section up and running! I got a lot!

  38. denise on September 4th, 2008 2:29 pm

Hi Val! I’ve watched your assesments also and loved the cooking. I would love to join maybe that is the push I need to get back where I want. I’m a stay at home mom who can’t afford personal trainers but would love some feedback and someone to keep me accoutable. Especially on my food. I tend to get overwhelmed with cooking healthy always thought it was harder than you showed in that recipe you did. One question, I know lunges are great but I can’t do them due to different problems I assume there are other things to do. Would that pose to be a problem. I hope, hope, HOPE not!

I’m excited to see what’s coming on! Denise

  39. denise on September 4th, 2008 2:45 pm

whoops! I see that you want to know my story! I’ve recently gained 30 pounds really fast and have really felt low about that and like a failure. I’ve always struggled with my weight but what has worked for me were 2 things, a contest at my gym that showed before and after pictures of how people changed their bodies and eatting habits within 3 months. Had a blast with that. Worked with a personal trained then and that helped me to have the 1 on 1 knowing me and wanting to help me in my own individual areas and problems ha. And about 4 years ago I started to run and ran 2 1/2 marathons and other smaller races but last November I got a stress fracture and had to stop. I believe thats why I gained all this weight I worked so hard to get off was just being depressed about that and had to stop working out as I was. I need a goal and a challenge to keep me going. I still can’t run because whe I was in the boot and not using one leg for awhile got me out of balance in my muscles and weak hips and such so have been working on that but I have been swimming, biking and elliptical. But that bores me. So after writing this what really helps me is anything that helps my competitive side. I loved running races so I would work out towards that goal and being in that contest. It gave me something to work on. I have ADD so I need that help to focus me. What does not work for me is leaving me to my own devices and programs out of books or anything impersonal. If I feel someone is really cheering for me and not letting me weasel out, I’m good to go. I will do everything in my willpower to work with that person.

I have 2 boys in Kindergarten and 3rd grade and they keep me busy with their activities so I have to squeeze in my workout with everything else.

Anyways, sorry so long but I hope I get picked and this be the thing I need to get excited about and seeing me accomplish something which I haven’t in a while. Thanks! Denise

  40. Valerie Waters on September 4th, 2008 2:46 pm

    Hi Aubrey!
I am so excited you are doing RCR! You are doing it the right way so don’t worry.

  41. Valerie Waters on September 4th, 2008 2:49 pm

Everyone that wants to cook the dinner that’s in the video but doesn’t have a grill, I do this exact same thing using my grill pan as soon as winter rolls around. Seriously, a grill pan is one of your best kitchen expenses. The aren’t expensive and you can use them for just about everything. Can’t live without mine. It is just because it is summer and gorgeous out that I use the bbq.

  42. Sue on September 4th, 2008 4:32 pm

I would love to participate in the group. I have been through RCR twice with some pretty good results. I’m down 45 pounds, but still need to make more progress. It would be great to get a little more guidance on how to proceed. I’m getting married next May so this is even more important than before. I got my Valslides and kit last month. I was working around them until then and am so glad I decided to take the plunge. They are fantastic! The RCRC site is coming along nice and looks great. It’s very motivational. Thanks so much for all your hard work!

  43. jodie on September 4th, 2008 5:08 pm

    Hi Val,

Thanks so much for everything you are doing. It’s really appreciated.Just curious, do you have anymore dvd’s left?

  44. Jenny on September 4th, 2008 6:47 pm

    Hi Val,

I am very interested in your 6 week coaching group but am unsure if I am a good candidate for participation. I have worked out most of my life and have followed your exercise suggestions on the web site. Two months ago I was diagnosed with breast cancer and last month I had a mastectomy. I am not allowed to lift more than 10 pounds and can not run or jump.

Working out has always been such a fun and important part of my life . Not being able to do so has effected me as much as the shock and reality of cancer. The cooking segments are great for me as they keep me connected to the “gym world”. It sometimes is easy to feel sorry for yourself and indulge in unhealth eating.

Please let me know what you think or if you have any suggestions for me.
    Thanks,
    Jenny

  45. Jill on September 4th, 2008 7:17 pm

    Hi Val:

I would love more info on applying for the coaching group!
    Can’t wait for the details.

I too, missed out on the DVDs… let me know when more become available.

Whoa, look at all of these new commenters! Awesome! The Club is going to be super cool. Can’t wait!

  47. Terri on September 4th, 2008 8:27 pm

I would love to be part of the RCR group! I’ll keep checking your site for all the updates. Thank you so much for all of your hard work and effort to reach as many people as you can. It’s very appreciated!

  48. Linda on September 4th, 2008 9:41 pm

Jenny, I hope all is going well for you at this point re your prognosis. I think it’s just awesome that you want to try and do whatever exercise you can in the interim. I think that by doing what your doing, it not only make you stronger physically, but mentally/emotionally as well, and that is such an important thing to have in your recovery. You are an inspiration–stay strong and we’ll be cheering you on. Best of everything to you…

  49. debbie on September 4th, 2008 9:44 pm

I’m interested in the one-on-one assesment, too! Please send me an application, Val!

  56. Stephanie on September 5th, 2008 12:41 am

    Hey there, Val!

    Thanks for the yummy recipe!

If there is still space, I would love to fill out an application for the RCR Club. I’m almost through week 2 of RCR and am happy to report that my booty is (finally!) moving in the right direction! Since I tend to be motivationally challenged, the quick results and online encouragement is really awesome!

Jenny – this post also comes with prayers and love for you. You sound like a fighter and that’s an inspiration for all of us. Best wishes!

  57. Lara on September 5th, 2008 6:19 am

Val, I’d love to be in the 6-week coaching group! Also, I’d just like to say thank you for working so hard to provide others with the info they need. It’s encouraging to me to feel like you really care about helping others reach their goals. Thanks!

  58. Laura on September 5th, 2008 9:52 am

    Hi Val,

I would love to be part of the Platinum 6-week program. I am doing RCR right now and loving it - even with a few hiccups in week 4.

I am so excited for your tips and workout suggestions. You are such a valuable resource and role model for making these lifestyle changes.

    Good Luck with everything!

    Laura

  59. Bonnie on September 5th, 2008 10:33 am

    Hey Val!

I am so interested in becoming part of the Platinum 6-week program. I travel a TON for work unfortunately. I have been able to keep up my RCR workouts, but the food at restaurants is such an issue. I am confident that I will conquer though!!! It’s just a lot of focus, but I read the support group all the time and it’s so inspiring to hear from strong women who want something better for themselves. I can’t wait for the club to start!!! Thanks for the motivation and tips… I’m going to try that recipe ASAP. Thanks for passing on your positive outlook, Val…

Good luck, and don’t be nervous! Just think of all of the clients that you’ve had one-on-one and the support they have given you and then multiply that times however many people will be participating!!!! Oh my gosh! It can only be good… no worries.

    Bonnie

  60. Sharon on September 5th, 2008 8:40 pm

I am so excited about this club. I would definitely purchase a 6 week membership and assessment. I can say that the cost is not a big concern. My health is the concern. So I am looking forward to signing up.

  61. DAWN on September 10th, 2008 10:26 pm

Val–you go girl–something other than chicken breasts. This recipe is so liberating. Can’t wait to try it!

Excited to be platinum and can’t wait to get started!
